Clams in salsa verde.

 

What can I say about this recipe? I had my sister in-law over from London. I asked if she wanted to eat clams, but she told me that she did not like clams. Are you sure? I said. Yes I am sure. He, he, he OK let me try and change your mind.I bought half a kilo of these beauties and a big piece of Spanish bread. I cooked for her the Clams in salsa verde and to her surprise, she was asking for more the following day.

Here is how you do it.

You will need,

Clams

Garlic sliced

Dry chili peppers

Parsley sliced

Dry white wine

All purpose flour

Cook the garlic and chili in a wide pan with olive oil. Once the garlic starts to golden add a spoon of flour, stir for a minute and pour a  good amount  of dry white wine, wait till  the alcohol evaporates. By now you should have a fairly thick sauce. Add the clams and the chopped parsley. If the mix is too dry add a bit of water, but remember the Clams will release its own water too. Wait until the clams are open and its done!

Please eat this straight away.
