Maki sushi of chicken floss

Do not know what to do with left over cooked meat, such as chicken, pork or beef? Make meat floss!!!

This is my first attempt, so maybe it is more like bits than floss, but it taste great!!!!

How to make chicken floss??

  • Shred the cooked chicken into pieces with your fingers. Reserve.
  • Make a paste with …..
  • Dried chillies to taste, quite a bit of  shallots, and more or less equal amounts of garlic, ginger, lemon grass, coriander seeds, cumin seeds and fennel seeds.
  • Heat a wok, combine coconut milk and the paste ….and leave it to simmer gently for 15 min.
  • Add in shredded chicken, sugar, and salt to taste.
  • Stir and cook on a low heat with constant  turning and scraping with a spatula until dish is really dried.
  • This will keep in a sealed container for weeks, if not months !!! In our case only a few days, because we can not resist to eat it!!  It goes great with anything like plain rice, noodles….

    I used it on a Maki sushi….. have  a look..
