How to roast the pork,
Make a paste with garlic, brown sugar, Indonesian sweet soy sauce and Chinese five spice. Rub the Pork Hocks with the paste and let it marinade overnight.
Next day….. pre heat the oven at 180 degrees. Place the Pork Hocks in the oven tray and cover with water. Now cover also the tray with foil and cook for about an hour. Sometimes, the water will go dry, if that is the case keep adding more water until the pork is soft.
The Soup stock,
In a deep pan, add water, chicken stock, soy sauce, mirin, vinegar and slices of ginger. Bring it to a boil and simmer for 30 min. Once cooked, remove the ginger.
Cook the Soba Noodles according to packaging instruction, and rinse in cold water.
Place the Soba Noddles in a bowl with the Pork Hocks ( take the bone out, once cooked ) and garnish with baby radish, spring onions, Thai red chilies and sauteed cabbage. Add a splash fish sauce and sesame oil.
Now finish it by pouring the stock.
And it is ready to eat.
