Watermelon Curry with pistachios

 

Perfect for a hot summers day. I was not sure about this recipe at first, but yesterday I thought I´d give it a go, and what a surprise!!

It´s spicy, sweet and refreshing. Goes really well with white rice.

This is how you do it

Cut the watermelon into cubes, keep some aside for the paste mixture.

In the food processor mix the cumin powder, coriander powder, red chili powder, a fair amount of garlic, a few pieces of de-seeded watermelon, oil and lemon juice. Blend and add the mix to the pan, and cook for 4 to 5 mins.

Now cook the diced watermelon in the mix, for another  5  to 7 mins.

Serve with rice and chopped pistachios.

A delicious surprise!
