La Rioja Embuchados ( Lamb intestine )

I was in La Rioja last weekend, and I have to say that … every time I go … I have to eat this stuff.

Lambs intestines??? OK, I know…..  it won’t  appeal to everyone, but if you give it a go, Embuchados will truely surprise you with a very positive experience, and you will be coming back for more.

These are La rioja little secrets,  made with small lamb intestines (after a deep clean), and then rolled until you have a round shaped ball.

They are, then cut in thin slices and cooked at a high heat,  served with salt and  roasted ´Alegrias Riojanas´, a Riojan spicy chili.

Embuchados are sold in almost every  butcher shop, in la rioja, ready to be cook. You can even ask,  to slice them for you.

The ´Alegrias Riojanas´ are also sold fresh nearly everywhere. But If you can’t get them fresh, use the tinned ones.

OK, so …

The weather was fantastic, we made some flames and barbecued the lot.

The Alegrias peppers.

In a mortar and pesto, crush the previously cooked and pealed Alegria peppers with salt and Extra virgin Olive Oil.

Almost cooked!!, but a bit longer…..I like them real crispy.

This is it!!

Now place them on a plate and add a drizzle of olive oil and vinegar. Also sprinkle a generous amount of salt and eat with the Alegrias…. be careful with the alegrias , as they are hot, hot!!

    David Monaguillo, from La parroquia 2.0 suggests this place.
    I´ve been here before though. Nice blog.
    I don´t like tripe but I would substitute this meat for great Rioja lamb little chops (chuletitas de cordero).

      I also had Baby lamb chops that I cooked on the BBQ, but I didn’t take any pictures cos it went dark…. but I love them the most.
      I have been looking at you Blog and it is really good. I love chocolate, but I hardly know anything about it. I am going to follow you and try to learn something 🙂

    Hey Sombras,

    Congrats for the blog. Lots of nice food. Here in Brazil we eat lamb intestines with rice. We cut the intestine in small pieces and pack inside the lamb stomach, that was previosly removed and cleaned. Then we cook adding coriander and serve with rice.
    Good food. I eat at least once a month.
    Very nice knowing that you´re doing good, my friend!!!
