Easy and healthy way of cooking fish. In this recipe I have chosen fresh cod, because it is tender and light. But you can use any other fish.
How to Cook it!
Get some fresh cod cut in cubes, and season them with sea salt, black pepper and a bit of olive oil.
Cook them in a non-stick pan for 2 min each side. Keep a side.
Chop an onion finely and cook it at a medium heat in the same pan where you have cooked the cod. Util the onion is soft.
In a mortar and pesto, crush a clove of garlic, and pour a little bit of water together with chopped mint.
Add ready cooked peas to the pan, followed by the mixed .
Cook the peas and the paste for 3 min at a low heat and now add the cod.
Continue cooking everything for another 3 more minutes.
Tip: Frozen or Canned peas are good.
