It is the beginning of the sardine season, so the other day we had a sardine feast in our local gastronomic society. A few people didn’t turn up so we had a few left over.
I decided to make this lovely snack to accompanied our beers the next day.
It is really simple,
Clean the sardines, by taking off the heads and inside of the belly.
Dry them well ( important).
Now fry them in olive oil until crispy.
In a bowl mix some fine sliced onions, chopped coriander, green chilies, red dry chilies flakes, salt and pepper and squeeze some lime.
Now add the fried sardines and mix!
The beauty about this dish is that you don’t need to separate the bones of the sardines, just eat them whole.
